Poached Halibut Steak with Blueberry-Cherry Sauce
Serves 2
What you need:
2 halibut steaks
2 tbsp organic butter
salt & pepper
Juice of 1-2 lemons
1/2 tbsp apple cider vinegar
1 cup fresh or frozen berries
1/4 tsp cinnamon
1/2 tbsp ground chia seeds
What you do:
Add 1/2 lemon juice, apple cider vinegar, berries and cinnamon to a small saucepan. Heat on medium heat, stirring and squashing berries until soft. Add ground chia seeds at the end for thickening.
Meanwhile, season halibut steaks with salt & pepper. Melt butter in a pan (I use cast iron) and add remaining lemon juice. Simmer mixture on low-med heat. Add fish and cover for 8-10 min or until flakes but not dry. Add more lemon juice if more liquid is needed.
Spoon sauce over poached fish and serve with your favorite side salad or grilled vegetable.
Tip: Use leftover sauce as jam on your sourdough toast & nut butter
