Miso Soup

Easy Miso Soup

What you need:

3 cups filtered water or broth
1/4 cup tamari sauce
1-2 tsp fresh ginger (grated or cut fine)
1/2 cup extra firm organic tofu (cubed)
1/2 sheet nori (or other seaweed), ripped into small pieces
1 1/2 tbsp organic miso (dissolved in 1/2 cup warm water)
a handful of chopped mushrooms (crimini, shiitake, etc)
1/4 cup chopped green onion

What you do:

Add water or broth, tamari sauce to pot and heat gently on medium heat.  Add ginger, tofu and seaweed. While this is heating, mix miso with water in a cup.

Dissolved miso

Add to soup pot careful not allowing the soup to come to a boil. Miso is a live fermented culture that nourishes the good bacteria in your gut.  It’s benefits will diminish if soup comes to a boil.

Add green onion prior to serving.

Notes:

Add ramen noodles or other veggies to make it a heartier soup such as cut green beans, edamame beans, carrots, bok choy, celery or broccoli.

Serve with your favorite sushi rolls or rice crackers.
