Spicy Ginger Turkey (or Chicken) Burgers
Ginger turkey burgers are a favorite of mine during the summer BBQ season. Jam packed full of protein, vitamins, minerals and flavor they are perfect for those busy weeks, post paddle practice, hike or a long day in the garden!
Makes 8-10 burgers
What you need:
1 lb ground free-range turkey or chicken
1/2 cup chopped onion
1-2 cloves chopped garlic
1 tbsp chopped ginger
1-2 tbsp cumin
1/2 tsp sea salt
1/8 tsp ground pepper
1/8 tsp dried mustard
1/8 tsp turmeric
1 cup cooked quinoa
1 egg
1 grated carrot
1/4 cup chopped red or orange pepper
a handful of fresh dill
1/4 cup chopped arugula, kale, spinach, or dandelion greens, etc
1/8 cup ground flax seed
1/8 cup sesame or pumpkin seeds
What you do:
Brown ground meat in a pan with onions, garlic, ginger and spices. Feel free to add other spices that you enjoy, like curry, coriander, red pepper flakes. Once the meat is cooked & mixed well with spices transfer to a glass bowl. Add remaining ingredients and mix well. Form into patties. BBQ or fry in a bit of avocado oil and serve on a bed of fresh greens or in your favorite gluten-free bun. Top with fresh tomato, avocado, vegan cheese, lettuce or arugula (yes…I love arugula!)
TIP: Patties are perfect for freezing to enjoy at a later date so double the batch to assist with your weekly meal plan.
