Quinoa Tabouli Wraps

What you need:

Quinoa Tabouli Salad (see below)
Large cabbage leaves or collard greens

For Tabouli Salad

1-2 cups cooked quinoa (white or red or mixture)
Juice of one lemon (or more if desired)
1 clove of garlic (crushed)
1/4 cup extra virgin olive oil
1/2 cup scallions (include greens) or sweet onion, chopped
1/4 cup chopped fresh mint or 1 tsp dried mint
1/2 cup chopped fresh parsley
one tomato chopped
1/2 chopped cucumber
1/2 cup cooked chickpeas (optional)

Chopped veggies of choice such as:

  •  1/2 cup chopped sweet peppers or green pepper
  • 1/2 cup chopped zucchini or summer squash
  • 1/2 cup grated carrot
  • 1/2 cup chopped cauliflower

Top with sprig parsley, chopped cherry tomatoes, olives or goat feta cheese

What you do:

Mix all salad ingredients together in a large bowl and enjoy!  Refrigerating 2-3 hrs before serving will allow all flavors to flourish.  Enjoy as a salad or wrap it up in a fresh cabbage leaf or collard green.
