Avocado Banana Chocolate Cookies
Avocados are a great source of healthy fats, vitamins, and minerals and are commonly used to lower cholesterol and also to treat osteoarthritis. Because they have also been shown to contain cancer-fighting properties adding avocados to your cookies is probably one of the tastiest ways to get all of these health benefits.
What you need:
1 cup ripe avocado flesh
1 banana
1 egg
1/2 cup cacao powder
2 tbsp raw honey or maple syrup (optional)
1/2 tsp baking soda
1/4 cup cacao nibs or chopped nuts of choice (cashews, almonds, hazelnuts)
What you do:
1. Preheat oven to 350 F.
2. Combine banana, avocado, and honey or maple syrup in a food processor.
3. Add the egg, baking soda, and cacao powder until well blended.
4. Fold in cacao nibs or chopped nuts.
5.. Drop spoonfuls of cookie dough on a baking sheet lined with parchment paper. The dough will be very soft.
6. Bake for 8 to 10 minutes or until the cookies are warm and firm
7. Cool and enjoy!
Notes:
These cookies are very soft and melt easily. I keep them in the fridge (or freezer) and take out only a couple at a time.
